Vegetarian Indian dining

Where can I get vegetarian Indian food in Edinburgh?

The Prahna Indian Grill in Corstorphine, Edinburgh, has a substantial vegetarian and vegan menu, with around half of every menu suitable for vegetarians and most dishes available vegan on request. Signature vegetarian plates include Baby Aubergine glazed with peanut, jaggery, and tamarind; Paneer Tikka charred in the tandoor; and Daal Makhani simmered overnight.

Vegetarian dining is a first-class part of every menu at Prahna, not an afterthought. On the à la carte we serve Baby Aubergine in a south-Indian peanut-jaggery-tamarind glaze, Paneer Tikka in a yoghurt and amchoor marinade charred in the tandoor, Spinach and Apricot Tikki, and Yam ke Kebab fragrant with mace and rose. The Proud Curries section runs Punjabi Chana, Sag Aloo, Daal Makhani, and Daal Tarka, all suitable for vegetarians and almost all vegan when the cream and ghee are held back.

Gluten-free dishes are clearly marked with a GF tag on every menu. Vegan dishes carry a VG tag. The Vegetable Biryani is built with the same dum-cooking method as the chicken and lamb biryanis, layered under a sealed naan crust with saffron rice, paneer, and seasonal vegetables.

For weekend brunch, the Full Vegetarian Breakfast is the headline plate. Afternoon chai routinely includes more vegetarian bites than meat ones. Tell your server about any specific allergens when you sit down and they will guide you accordingly. The kitchen avoids cross- contamination between meat and vegetarian preparations on dedicated boards and pans.
